Nigella express quesadillas
Quesadillas come in many forms and ways, but when it comes to quick dinner recipes: Nigella express quesadillas are a must! What’s even nicer is that you only need to read this recipe once to know it by heart. Cooking without a cookbook makes quick dinner recipes even quicker!
Although I am eating a lot of avocados in guacamole these days with tortillas, you really need to try out Nigella’s recipe!
Nigella express quesadillas ingredients
- 1 soft flour tortilla
- 30g / 1oz thinly sliced cured ham
- 3 thick slices pickled green jalapeño peppers, from a jar
- 60g / 2oz grated cheese
- 1 spring onion, finely sliced
- lots of fresh coriander leaves
- 1 teaspoon organic extra virgin oil
- ready-made salsa (you can buy but better to make them yourself in advance!)
Nigella express quesadillas ingredients
- Cover the tortillia with ham.
- On one side of the tortilla only: add jalapeño slices, grated cheese, chopped spring onion and coriander leaves.
- Fold the tortilla in half to make a half moon (see above picture)
- Heat some oil in a tefal frying pan or oil a griddle pan and heat it up
- Give the tortilla 1 minute on each side untill it gently brownse and the cheese has melted
- Serve with salsa
