Cheap flights to Kos…You get what you pay for… Anyway, I arrived safe and sound in Greece. Domestic flights are not always punctual and after a bumpee connection I am ready for my daily Kos: help my family out in their tourist business.

Things were quite busy last few days, so blogging got a bit at the background. Seems we have everything under control again, so TheSkinnyCook is back I just need to be very careful that my arthritis finger doesn’t end up on a plate: yuckies! But we will call it a Greek specialty

Yes, that’s what it is all about: cheap holidays in Kos really gives you what you pay for: you can eat better in a Greek restaurant in your neighbourhood than having to eat yet another souvlaki that looks like it was cooked last week.

Kos Greece is like McDonalds Hamburgers: you can get a taste of hamburger, but it’s not the best. Same with Kos: you can get a taste of Greece but it is not the best. The food I ate in Athens on the other hand was a gourmet delight in a very picturesque restaurant!

Greek economy being part of Europe cannot compete with "next door" Bodrum Turkey, but if you are a retired Greek living overseas, then you will probably know you can make some extra money in the tourist season in Kos Island

Yes, these are the 3 words that keep in my mind these days.

Arthritis due to my finger that is not getting better, yet not getting worse, so that should be already a plus. Just that typing with an arthritis finger reminds you every second that something is not fully right. I started an Arthritis treatments blog already, yet one of the things to get my arthritis finger from being worse is to stop typing…. so big dilemma…

Then I need to lower my Cholesterol and I don’t want to take medicine yet. My take at medicine you can read at Metastatic Liver Cancer…

And then there is nasi lemak. Nasi lemak. Nasi lemak. You know those silly Christmas songs that keeps on pounding inside your brain once you stepped into a shopping mall around Christmas? Well, same thing with Nasi Lemak. Only problem is that I don’t have to be in a shopping mall to hear the "nasi lemak" song… For those that don’t know: there is "a certain relation" between nasi lemak and cholesterol: less Nasi lemak = less Cholesterol.

As a cook having arthritis in 1 finger, my logical way of beating arthritis is in finding recipes that can help to ease the symptoms of arthritis or cure arthritis all together. I did find that Green Lipped Mussels containing glucosamine could be a help. Yet a green lipped mussels diet becomes boring as well.

To get new inspiration, I took a look at the cream I am using for my osteo-arthritis and it said: contains Aescin or Horse Chestnut. I remembered the chestnuts we used to throw in the fire when we were kids (please don not do this at home..) and eating them fresh or roasted.

Yet this is Horse Chestnut: it looks like normal chestnut but it is completely different (husk of the horse chestnut has less "hairs" and only 1 big horse chestnut seed). Most important: the fresh fruits of:

Horse Chestnut are not suitable for eating nor cooking.

Yet horse chestnut can be consumed in:

horse chestnut supplement
horse chestnut extract

The horse chestnut tree is huge and very beautiful when blooming though. Yet, for my cooking quest against arthritis, this means: back to cooking-books and back to quick dinner recipes…
