Delicious Thai red curry paste recipe
This Thai red curry paste can be used in our Tom Yum Soup Recipe or in the other Thai food recipes like Thai red chicken curry. If you have made too much Thai red curry paste, freeze it in into small ready sized quantities. So you only need to make the Thai red curry paste once and can enjoy it for fast and easy Thai recipes later.
This Thai red curry paste can also be used to make an easy Thai green curry paste by using green chilies in stead of red chilies.

Thailand memories for sure ask for Tom Yum!
This for sure is my all time favorite soup: hot (not that you need to blow your nose every 5 seconds, then it is too hot…), spicy, sour, sweet and with lot’s of coconutmilk: simply delicious!

My wife gave me a 6/10 for this dish. Must be because I didn’t serve any rice. No rice, no marks… basic eastern cuisine logic!
Anyway, I can brag about this recipe because it is a 1 pan dish ready in less than 30 minutes!

Thai Basil
The plant on the right top are a few stems of flowering Thai basil. Cute for decoration but of course you should use the Thai basil leaves in your meal and by all means, don’t be stingy!
Thai cooking
As expected, this dish has the typical Thai ingredients; sweet, sour, salty and spicy:
For 2 persons:
- half a pound (250 gr) minced meat (I love to make a mixture of homemade minced pork with minced prawns)
- 4 potatoes
- 3 pink tall green chilies
- a big bunch of Thai basil leaves
- a small organic cauliflower (if you put your 2 fists together in the form of a heart, that’s the size of those organic small cauliflowers)
- 1 teaspoon cumin
FOR THE CURRY PASTE
- 1 tablespoon fish sauce
- 2 teaspoon brown sugar
- 3 green chilies (as tall as my pinky)
- juice of half a lime
- 3 cloves garlic
- 1 inch (2.5cm) fresh ginger
- 1/2 teaspoon cumin
- 1 teaspoon coriander powder
- some water (1/3 cup)
Quick dinner recipes’ preparation
- Put some oil in a pan and add the cumin. Leave on the fire for 1 minute.
- Then add the minced meat
- Meanwhile peal the potatoes, cut in 1/2 inch (1.25cm) cubes and add to the frying pan
- Make the paste in an electrical blender
- Add to the meat and potatoes and stir-fry until the aroma of the spices comes out
- Simmer for 5 minutes with a lid on.
- Meanwhile wash and cut the organic cauliflower in florets.
- When the 5 minutes are over, add the cauliflower and simmer for another 10 minutes until the potatoes are done.
- Meanwhile squeeze some healthy oranges to make orange juice.
- Remember: adding extra rice can gain your quick dinner recipes more points
