New Zealand Green lipped mussels

If you live in New Zealand, you are so lucky to get the green lipped mussel freshly provided. In Malaysia there is not much Sea Mussel available, and these New Zealand green lipped mussels are mostly frozen when shipped. What is good about green lipped mussels is that they contain a high dose of "glycosaminoglycan", which helps to keep the cartilage between your joints, meaning you will get osteoarthritis at a later age, that is if you will ever get osteoarthritis.

Creamy mussels with coconut cream

If you are a real Thai chef, then you probably will say: this is not really Thai food. And you are right. This is an interpretation of an English chef for what he has seen as being Thai food.

It all depends on who you are and what you like: some say they like Chinese cooking yet they do refer to the Chinese food served in the Chinese restaurants here in the west. They are far from what is served in the east. Yet, if you have a western taste, maybe you would love the most Thai recipes adjusted by western chefs like Jamie Oliver. Try, taste and see!


Creamy Mussels : ingredients

  • 4½ pound (2 kg)best live Mussels (for tips how to buy mussels: go to Mussel Recipes)
  • 5 spoons of olive oil
  • 2 cloves garlic, finely sliced
  • 3 sticks lemon grass, outer and green leaves removed, finely sliced
  • 2 fresh chilies, red, green or both (Jamie Oliver does not mention what kind of chilies to use. We recommend you use the long ones for taste and add1 or 2 bird eyes chilies to make your dish a bit more spicy hot)
  • 3 tablespoons finely sliced ginger
  • 2 handfuls of fresh coriander, pounded or finely chopped
  • 1 tablespoon sesame oil
  • salt
  • freshly ground black pepper
  • 5 spring onions
  • juice of 3 limes
  • 1 x 400ml tin of coconut milk

  1. Place your mussels with a couple of lugs of olive oil in a large, very hot wok or frying pan.
  2. Shake around and add the rest of the ingredients, apart from the lime juice and coconut milk. Keep turning over until all the mussels have opened. Throw away any mussels that keep closed.
  3. Squeeze in your lime juice and add your coconut milk. Bring to the boil and taste.
  4. Tips from Never Trust a Skinny Cook:
    1. If too sour, add some brown sugar to taste and serve immediately.
    2. Use 4 to 5 extra lime leaves (kaffir lime leaves) and replace the salt with fish sauce for an even more authentic Thai taste when preparing this mussel recipe
