This Jamie Oliver recipe is one of the old-fashion English food recipes, what Jamie Oliver used to eat at his grandmothers'. Just be prepared for the twist: this Jamie Oliver recipe is served with custard out of a packet... In Germany, this pudding dish will be served with vanilla ice-cream, which I prefer.

"Sheila's pudding" with pure Vanilla

Jamie Oliver is a big lover of pure vanilla. Pure vanilla is what this dish makes so special! Even with the best Vanilla flavoring, you just cannot get the same vanilla flavour using vanilla extract. Although at the time Jamie Oliver made this vanilla pudding recipe, vanilla pods cost 80 English penny, this pure vanilla is worth every penny!

But if in your country pure vanilla is not available, then choose amongst the vanilla flavoring you can buy until you find the vanilla flavoring that suits you best.


Pure Vanilla Peach Pudding: Ingredients:

  • 6 ripe peaches or an equivalent amount of plums
  • 3 tablespoons sugar (more or less)
  • 4 tablespoons water
  • 1 vanilla pod, cut lengthwise and seeds removed
  • 4 1/2 ounces (125 gr) butter
  • 4 1/2 ounces (125 gr) caster sugar
  • 2 large organic eggs
  • 4 1/2 ounces (125 gr) self-raising flour
  • a pinch of salt


Pure Vanilla Peach pudding: Preparation

  1. Take out eggs and butter so they become at room temperature.
  2. Half the peaches, twist the 2 halfs and remove the pit.
  3. Preheat the oven to 350 degrees F (180 degrees C).
  4. Put the peaches in a pot with the 3 tablespoons of sugar, the vanilla and water. Put a lid on and simmer for 5 minutes.
  5. Meanwhile : grease ovenproof dish and lightly add some caster sugar at the bottom if you want to be adventurous. Otherwise just add flour like what you would do when baking a cake.
  6. Make sure the butter and eggs are at room-temperature. Beat the butter, sugar and eggs until light and fluffy.
  7. Add the flour and mix thoroughly.
  8. When the liquid at the bottom of the peaches becomes syrup, poor it all in the buttered ovenproof dish. Arrange the peaches so they are evenly spread.
  9. Take the dough and spread "roughly" over and around the peaches

  10. Bake in the preheated oven for 45 minutes.
  11. Remove from the oven and serve with (hot) custard or cold vanilla ice cream.
