This Italian tomato recipe is part of Jamie Oliver's Tagliatelli, spinach and Goat Cheese recipe from his cookbook from Jamie Oliver : Jamie's Dinners. Italian food recipes, especially the Italian pasta recipes are ideal as they use a lot of tomatoes. Lots of tomatoes these days are organically grown of you can just buy them in your organic food shop. But for the real deal, try to grow organic tomatoes at home: yes, tomatoes do grow in a pot on a warm balcony. Your Italian pasta recipes will love it!


Homemade tomato sauce recipe: ingredients

  • 2 to 3 cloves of garlic, chopped
  • some fresh chopped basil stalks or a good pinch of dried oregano.
  • 1 long fresh red chili
  • a couple of tins of plum tomatoes (now how much is a couple Jamie Oliver? I always find it a pity that a good cook like Jamie Oliver with good recipes leaves out the exact measurements) Personally I make this recipe with 1 tin and multiply all the ingredients if I make a whole lot of this organic tomato sauce in advance)
  • sea salt
  • fresh grounded pepper
  • red wine vinegar

  1. Fry the garlic gently in olive oil with the basil and chili. (you can also grow your own organic basil and chilies in a pot on a balcony. In fact our balcony is our best supplier of organic food!) Pierce the chili once with a knife so it doesn't explode when frying. Red chili always gives a subtle heat to a tomato sauce.
  2. Add the tomatoes - try to get hold of the best Italian tomatoes - and leave the tomatoes whole. The tomato seeds can be a little bitter, so if you chop the tomatoes up, the tomato sauce could be less sweet as it should be.
  3. Season with sea salt and freshly ground black pepper and simmer your tomato sauce gently for 30 minutes. You can nicely take a shower in the mean time!
  4. Remove the chili.
  5. Break and mush the tomatoes up with a spoon. Add salt and pepper to taste if more needed. Add a tiny swig of red wine vinegar to give it a little twang.

Let cool down and divide in sandwich bags to freeze in if you made a big pot of this organic tomato sauce.

  • Only use vinegar if you really like the taste. Personally I like to use less vinegar than Jamie Oliver and for this recipe: I let the organic tomatoes speak for itself and don't add any vinegar in this easy recipe for pasta sauce.
  • Jamie Oliver recommends an Italian tomato brand called La Fiammante. Each tin of tomatoes contains one basil leaf to flavour the tomatoes. In Malaysia, I love to use the organic tinned tomatoes from Waitrose. But I prefer the fresh grown organic tomatoes on my balcony because they make an even more easy recipe: all the ingredients can go straight into a blender and set to simmer in a pan: the longer you simmer, the more delicious your tomato pasta sauce will be. (the latter is the secret of a delicious pasta sauce in authentic Italian recipes: simmer the tomato sauce for a couple of hours, and a couple means 3 or more ..., just make sure the tomato sauce doesn't dry out!)
