Calamansi use

If you live in Malaysia, Indonesia, the Philippines: then you probably have a calamansi tree growing in a pot like we do. Yet in warm summer countries like California or actually more or less everywhere these days due to global warming,
you can grow your calamansi yourself almost everywhere.

Lazy men’s calamansi use…

A winning healthy recipe on a lazy hot day: lazy Calamansi juice.

  • take 2 calamansi limes (yes, leave them whole, no need to peal or do anything!)
  • add a little less than 1 oz (25g) brown sugar
  • add about 3 oz (80gr) ice (add more if you want a smoothie in stead of a cold refreshing drink)
  • add about one and a half cup (330ml) water (that is until my Magic Bullit blender is full)

Do everything in a blender, wait a few seconds till the rind drops to the bottom and your lazy calamansi juice drink is ready!

Now I have to admit, I just haven’t any Filipino food recipes under my sleeves, as I never even visited the Philippines. Yet whenever I see a new recipe from another country, it feels like I am visiting that country already…

So let Filipina mom Chesca
take us on a foody travel to the Philippines!

In the Philippines we eat with a spoon and fork (well some of us eat with our hands, no utensils…but let me explain that another time).

Each time you spoon something in, it is common to put a little bit of everything in EACH spoonful, for the Filipino food recipe below that means: put a bit of rice,fish and egg…all at once in your spoon and dribble in some vinegar again with each spoonful.

filipino recipeThe original Filipino food recipe uses fried dried fish. Since Chesca now lives in North America (read: not very diverse compared to Asian food…) she has had to find substitutes for certain comfort food. Nothing beats "the locals" looking for substitutes for original ingredients!

Fried dried fish can be substituted by store-bought anchovies : these canned anchovies taste very much like the dried fish (also called tuyo or dilis, in Malaysian food it’s called ikan Bilis) they have in the Philippines.

  • canned anchovies in olive oil
  • steamed rice
  • sunny side up egg

How to eat Filipino style?

Take a little bit of everything in one spoonful,dribble some vinegar on it(Tabasco optional) : it is a taste explosion.
