What are candlenuts?

The candlenut is often used cooked in Indonesian and Malaysian cuisine. In Indonesia they call it kemiri and here in Malaysia we call it buah keras.

 

On the island of Java in Indonesia, candlenut is used to make a thick sauce that is eaten with vegetables and rice.

 

Outside of Southeast Asia, macadamia nuts are sometimes substituted for candlenuts when they are not available, as they have a similarly high oil content and texture when pounded.

 

But the flavor of macadamia nuts is quite different: candlenuts are much more bitter and be aware that candlenuts are mildly toxic when eaten raw.
